Shiraz

Is Australia's principle red wine grape due to several factors, the prime one being the variety's ability to perform well under a wide range of climatic conditions. The wines it produces have good colour, contain moderate acid and tannin levels and display mild fruit flavours. In some regions is still incorrectly called Hermitage.

Sultana

Is probably the most important grape as it is used for drying bulk wine and fortified wine production. Approximately one third of all planted vineyard area is Sultana and about 75% is dried. It is very susceptible to fungal diseases, downy mildew, oidium, black spot and its berries are easily damaged by rain when ripe. For this reason it is only grown commercially in warm dry climates.
