Cabernet Franc

Produces wine of high quality, with a distinct character and is softer than Cabernet Sauvignon, with which it is often blended. These grapes are better suited to cool climates than Cabernet Sauvignon and recent studies indicate that it may also produce better wine in hot climates.

Cabernet Sauvignon

Is regarded as the premium red wine grape in the world. It is prone to poor set in cool climates and in Australia is regarded as being low yielding, but selected virus free clones have improved production levels.

Chardonnay

It is used to produce high quality white table wines, particularly varietal styles which can be barrel fermented, oaked or unwooded. It is also blended with Pinot Noir in the production of sparkling wines.

Chenin Blanc

It has been grown in Australia for many years, but under various incorrect names. For example, much of the Semillon in WA and all of the Albillo in SA was in fact Chenin Blanc. It is a vigorous variety maintaining a good acid even in hot climates and also produces a good base for sparkling wine.

Cinsaut

Its production is mainly small and blended with more tannic varieties in red wine, some is also used to produce average quality port.

Crouchen

Has fallen out of favour in Australia with winemakers and production halved since the mid 1970's.
